01 - In a medium mixing bowl or mason jar, add rolled oats, milk, brewed coffee, packed brown sugar, Greek yogurt if using, chia seeds if using, vanilla extract, and a pinch of salt. Stir until the mixture is thoroughly combined.
02 - Cover the container and refrigerate for at least 8 hours or overnight, allowing the oats to absorb the liquid and flavors.
03 - Before serving, stir the oats well. Add an extra splash of milk for a creamier texture if desired.
04 - Divide the oats evenly between two bowls or jars. Top with sliced banana, chopped toasted nuts, and additional brown sugar or maple syrup as preferred.
05 - Serve immediately while cold.
